MAPLE BAKED BEANS


2 lbs. beans (yellow eye or soldier)
1/2 lb. salt pork
1/4 c. sugar
3/4 c. dark maple syrup
2 tsp. dry mustard
1/2 tsp. pepper
1 1/2 tbsp. salt
1 med. onion

Pick over beans and soak overnight in cold water. In morning, parboil beans until skins crack when blown upon. Cut onion in quarters and put in bottom of bean pot or crock pot. Add beans. Cut through rind of salt pork to a depth of 1/2" and place on top of the beans. Mix the sugar, syrup, mustard, pepper and salt with 1 pint boiling water. Pour over beans and pork. If necessary add more water to cover. Bake at 300 degrees for 6 hours or more.

During the last 2 hours of cooking add more maple syrup if liquid is needed. If cooking beans in crock pot, cook for at least 8 hours on the low setting. The last hour remove cover, add more syrup, and cook on high.
